Chicken Rice

Khao Mai Kai or chicken rice is one of the most popular comfort food because it is easy to eat and to share, served with soup and dipping sauce. Chicken rice is made from 100% jasmine rice, mixed with minced garlic, ginger, pandan leaves and chicken fat to make the rice fragrant and shiny. The rice is eaten with soft poached chicken. Pour the sauce on top of the chicken rice and taste it– delicious in every bite.

  • Chicken broth (enough to cover the chicken when putting in a boiling pot)

    Jasmine rice

How to Make

Wash and drain 100% jasmine rice. Then, put the rice in the rice cooker, add chicken broth, salt, minced garlic, ginger, pandan leaves and chicken fat, and mix well. Cook until the rice is cooked through.

Put 1 cup of rice with 1.2 cup of clean water (1:1.2)

Close the lid, press the switch to turn on, and wait until the rice is cooked.

Set the rice aside for at least 10 minutes before eating.

Apply salt to the chicken and leave to marinate for 15 minutes.

Bring the broth to a boil and then reduce the heat. Submerge the whole chicken, breast side down in the soup. Simmer the chicken over low heat for about 30 minutes. Remove the chicken, making sure the chicken skin doesn't tear. Then dip the chicken into a bowl of cold water before lifting it up to drain.

Bring the broth to a boil again. Then, add the chicken in and boil for another 30 minutes. Bring the chicken up and dip it in cold water again.

Put the same chicken into the boiling broth. Turn off the heat and leave the chicken in the broth for 15 minutes. Remove the chicken and set aside to cool. Mix sesame oil and light soy sauce together and sprinkle on the chicken. Chop the chicken into desired serving size and put on a plate. The chicken is eaten with steamed rice from 100% jasmine rice and dipping sauce.
