Pork rib roasted curry is another popular Thai dish. The secret of its deliciousness lies in curry paste that contains a lot of herbs. The roasted curry paste is made by pounding the dried chillies and salt together until fine. Pound black pepper, galangal, lemongrass, shallot, garlic, turmeric and kaffir lime zest. Then, add shrimp paste and pound again until the ingredients blend into fine paste. Set aside. Put some roasted curry paste into a pan and stir fry until fragrant. Then add pork ribs, stir together, add water, and season with salt. Simmer until the pork ribs are tender. Add kaffir lime leaves to increase aroma. Serve with 100% dry white rice for more deliciousness.

Make roasted curry paste by pounding the dried chillies and salt together until fine. Pound black pepper, galangal, lemongrass, shallot, garlic, turmeric and kaffir lime zest until fine. Then, add shrimp paste and pound the ingredients until they blend into fine paste. Put the paste into a bowl and set aside.
Place a pan of vegetable oil on medium heat. When hot, add roasted curry paste and stir fry until fragrant. Then add the pork ribs and stir together. Add some water, season with salt, simmer for about 40 minutes until the pork ribs are tender.
After 40 minutes, turn off the heat and add torn kaffir lime leaves. Serve with 100% steamed white rice and side vegetables
Put 1 cup of rice with 1.5 cup of clean water (1:1.5)
Close the lid, press the switch to turn on, and wait until the rice is cooked.
Set the rice aside for at least 10 minutes before eating.
